IT’S INTERNATIONAL DAY OF THE NACHO!!

Yeppers and peppers!! That wonderful concoction of spicy delights, created right across the border from Eagle Pass in Piedras Negras, and inspired by U.S. military wives has its own day.

I cannot stress the importance of this wonderful comfort food. The ease of making it is only rivalled by its medley of flavors. As y’all know, I am a fan of comfort foods and one-pot meals, and this dish covers both rather deliciously. And to wash it down with a cold beer is heavenly.

Yes, with this beer, Negra Modelo. Corona is too watery, and hipster. I don’t even use it for cooking. Consider this your BOOZE* of the Week.

The Pac-12 decided it won’t expand further late Tuesday because commissioner Larry Scott failed to get assurance that Texas would back an equal revenue sharing plan if the league added the Longhorns, Oklahoma, Texas Tech and Oklahoma State, a source with direct knowledge told ESPN.com.

And just as things were going well, t.u. (AKA, University of Texas), decided to fuck it up for everybody. How? They partnered with ESPN to have their very own Longhorn Network. A move one can only describe as “dicky”. Such a partnership gives them a decided edge on recruitment opportunities in high schools, to say the least, not to mention the amount of money that the network would generate for t.u.

Well, as you can surmise, there was no way Texas A&M was going to let that slide. This is how I imagined it went:

A&M: How could you just cut the rest of us out like that??

t.u.: What? It’s just a little money, baby…nothing to get worked over.

A&M: A little money?? YOU WHORE!!!

t.u.: You melodramatic bimbo! Get over yourself.

A&M: Excuse me??? I’m not the one that just buttfucked the whole conference here!

t.u.: The other teams will understand.

OU: The fuck we will. Nice having that whole rivalry with you. Good luck finding an audience to compete with what you just gave up.

Baylor: Look, you just have to deal with it, like we are, A&M.

If I recall, one Aggie got the idea to do a take on the traditional “Maroon Out”, where Aggies wear either a white T-shirt or a maroon one, depending on which deck they sit. He got friends together, and got in touch with a T-shirt company to see if they could get Aggies to raise money for the NYC firefighter and police funds by selling either red, white or blue shirts depending on the game ticket seat. The company was sold out within two days, and the Aggies organizing it had to scramble for more.

And then Oklahoma State fans called, wanting to participate.

And what was supposed to be a football game became something bigger. It was no longer about A&M or Oklahoma State. It was about our love for our country, and how we would Beat The Hell Outta Terrorism™. This game raised $180,000 for the funds, and sales of photographs of the game raised an additional $30,000.

The humidity doesn’t help either. Here in my corner of Hades, it’s a cool 86* degrees overcast, with 84% relative humidity. It’s also 8:30 AM.By noon, it will be about 97*, and the heat index will make it feel like 105*. And then in the afternoon, it will get hot…

I have a feeling I will be jumping the sprinklers today as I get the patio ready for Eldest’s party tomorrow.

My A/C decided to take a swan dive last night, only with no graceful cry as it died. Just a forlorn racket from the unit outside. This being Texas, A/C techs are in high demand. It’s one of the reasons I hope one of my kids gets in the business. But because they are in high demand, I have to wait my turn. So, I’m keeping the house as dark as possible, not using lights, keeping the fans on, and oh yes…. not cooking!!

But since I do have to feed the kidlets, I am relying on cold foods for this evening’s meal. So, I shall be serving cold cuts, cheeses, crusty bread, and Caprese salad.

Incredibly simple to make, and so gooooood!!!

Caprese Salad

3 whole ripe tomatoes, sliced thick

12 oz Mozzarella cheese, sliced thick

Basil leaves

Olive oil

Kosher salt

Ground pepper

On a platter, arrange tomato and mozzarella slices as shown, tucking in basil leaves in between layers. Drizzle with oil, and sprinkle with salt and pepper to taste. In addition, you can take some balsamic vinegar reduction and drizzle on top. I avoid it because I have picky children…

And to wash this down, plenty of white wine. For me

As y’all know, Hubby is stationed in Egypt, and we were all set to go, until the Arabs decided to pull a Spring. Now with travel restrictions, I’m leaning towards meeting Hubby somewhere more stable, like Spain. Or maybe the Canary Islands, since I have relatives there. That is, provided I decide to fly alone. The thought of the TSA groping my kids is like a hot poker to my eye. If the kids want a vacation, we will go in the Mom Mobile, most likely to visit family throughout Texas. Hopefully, they will have plenty of booze available.

IRAQI REFUGEE GRADUATES HIGH SCHOOL IN 1.5 YEARS

Started as a 9th Grader with No Credits and Little English

You read that correctly. Anmar Jabbar, barely surviving the streets of Baghdad and Jordan, immigrates here, and assimilates in less than two years. He is completely fluent in English now, and has hopes to go to college and study auto design. His family has emigrated here, as well, and they are learning English and the American Way. Not only did he graduate in record time, and with good grades, he did it while holding down a job. And he isn’t done:

“I will finish my education and graduate from a university and that’s my dreams and that’s why I’m working so hard.” (emphasis added)

I wish his example would be telecast from every billboard and radio along the fucking excuse for a southern border.

I got a call from the school district’s automated system at 5:00 AM (because Deity forbid anyone with a pulse at the office be awake at that hour) to tell the parents there would be no school today. Well, understandable, considering under the snow is a sheet of ice, and we have no plows or salt or even sand to help with it. The Sounds of Silence outside are deafening

As for me, I plan to go out of my mind get drunk and hide bang my head against the table keep the kids entertained, as I help Hubby get ready to leave this Sunday. Oh, the joy…the rapture!!!

Senate Bill 354 would allow students, staff, or anyone else with a concealed handgun permit to carry guns inside college classrooms or dorms, expanding on permit holders’ current right to carry them outside of campus buildings.

The bill is being introduced by San Antonio Senator Jeff Wentworth, and has been a subject of speculation in the legislature ever since the Virginia Tech shootings. The Senate had approved a bill before, but never got past the House. Now, with a two thirds Republican majority in the House, the bill has a very good chance of passing. FINALLY!!

If the bill passes, it will only apply to public colleges and universities. Private institutions will have the option of opting out, or make their own gun policies. Maybe I’m a bit of a cynic, but opting to stay a gun-free zone would place a that college in the crosshairs of any criminal looking for a massacre. As with any unbiased report, one has to include the dissenting opinions:

“I’m completely against it,” said UTSA Freshman Malcolm Ramey. “It sounds completely idiotic to me. To allow someone to carry a gun on campus? It’s like giving them permission to shoot someone.”

Asking a freshman?? Why not ask a senior? Why not ask an adult? This freshman is not allowed to have a CCW. One must be at least 21 years of age in order to have this permit. Hey, Malcolm, guess what? That’s EXACTLY what the permit is for. It gives the owner permission to carry his firearm and use it in case of attack with a deadly weapon. What if someone was shooting at you, Malcolm? Would you still be against a lawful carrier pulling out his or her gun to neutralize the criminal trying to take away your right to live?

I can understand not liking guns. There is no law forcing anyone to own a carry a gun here in Texas. More’s the pity But I will never understand the propensity of people to keep the law-abiding citizenry from exercising their rights.
